* Ovalett Special is a premium performance sponge emulsifier which has been developed especially for those bakers that have a preference for a super-fine textured sponge.
* Ovalett Special ensures quick whipping properties and provides a remarkably stable batter that may be left unbaked for some hours.
* Ovalett Special is generally used in the range of 6-7% on flour weight with the all-in method, and may also be used with various egg-foam methods, or with a sponge mix such as Bakels “Sponge Cake Special”.
* Ovalett Special produces a perfect sponge that is not too fragile, while providing excellent flavour and fresh keeping qualities.

Eggs 2 7 81.25 Water * 2 2 71 Ovalett Special – 3 6.25 Sugar 3 2 104 Cake Flour 3 – 100 Baking Powder – 23/4 5.7 Non-Fat Dry Milk – 2 4.2 Salt – ½ 1 Total 10 31/4
Method: Place eggs, water and Ovalett Special in machine bowl. Sieve together the dry ingredients and add. Blend on low speed. Scrape down. Whip on high speed for approx. 5 minutes, followed by 3 minutes on medium speed. Bake cates at 375oF for approx. 15 minutes. Bake sheets at 425oF for approx. 7 minutes.
